Massimo Crepes Massimo Trombini and Joe Caccamo

Though not completely unknown on Maui, crepes aren’t your usual island fare. They’re something European, not tropical. That’s why I was happy to stumble across the Massimo Crepes and Verdleaf Juice food truck at the Maui Swap Meet. Joe Caccamo and Massimo Trombini are there every Saturday making an incredible selection of savory and sweet crepes, baked goods and Trombini’s green juice, known as Verdleaf.
“Massimo and I worked at Capische? together for a while, and he asked me to come work his crepe truck, too,” says Caccamo.

The morning I dropped into eat crepes happened to be Caccamo’s birthday. He said Trombini wanted to do the swap meet on Saturdays with the crepe truck, but he needed help. Caccamo saw an opportunity for a little extra cash.
“You need help with crepes, you can’t do it by yourself,” says Trombini.
So Joe works the front, taking orders and filling drinks, while Trombini spins out crepes in the back. I watched Trombini put together a savory breakfast crepe. After spraying the perfectly round and flat iron, he poured batter from a plastic gallon container, then spread the batter out with a little tool that looks like a squeegee. Then he scrambles an egg over the top and cooks it along with the crepe. Cheese, ham, and bacon come next, with some avo thrown in there, too. When it’s all sufficiently heated and cooked, he flipped it in half like a quesadilla and then once more for a quarter fold. The crepe was giant and took up my whole plate.

Their menu is as big as their crepes. The breakfast crepes include eggs and cheese, but they also have savory lunch crepes like the one with braised lamb, tomato and mozzarella or the one with grilled chicken Pesto, asparagus and mushroom. Of course, they also offer sweet crepes like lilikoi blueberry compote or Nutella banana. All the crepes range from $6.50 to $10, and can be made gluten-free if you ask.
Trombini’s Verdleaf green juice is made with parsley, lemongrass and ginger honey. It’s quite refreshing. During the week Caccamo, also delivers subscriptions to the green juice “milk man-style,” as he put it. At the swap meet, you can pick up cups of it for between $3.50 and $5.50.

One of Caccamo’s passions is baking, so he also supplies the food truck with pastries like chocolate chip cookies with mint or peanut butter cups and little brown butter blueberry tarts.
They’re trying to join the Kihei Town Party and Caccamo says they are playing with other recipes like perhaps offering freshly made pasta. For now, catch their crepes every Saturday at the Maui Swap Meet.
